Cryomaceration (5-10°C) for 48 hours, followed by decantation and fermentation in stainless steel tanks at a controlled temperature. Malolactic fermentation is avoided if possible.
6 months in stainless steel tanks. Followed by 9 months in the bottle.

It is an excellent aperitif; recommended with medium mature cheeses, creamed vegetable soups and white meat. Bolder pairings are not excluded, even with dishes of red meat.
The Guyot trained vineyard is situated on the top of a hillock at about 700 metres a.s.l.. It has western exposure and has had a “rittochino” planting system (arranged straight down slopes) in classic rows since the year 1991.
